Easy Banana Cake with Cream Cheese Frosting

Ingredients
  

  • 1 ¾ cups sugar
  • ½ cup butter, softened
  • 1 tsp baking soda
  • ½ cup buttermilk
  • 1 cup mashed bananas
  • 2 ¼ cups sifted cake flour
  • 1 tsp vanilla

Cream Cheese Frosting

  • 1 8 oz package cream cheese
  • ¼ cup butter, softened
  • 2-3 tbsp milk
  • 1 tsp vanilla
  • 4 cups powdered sugar

Instructions
 

  • Preheat oven to 350°.
  • Grease a 9x13 inch pan.
  • Cream together sugar & butter.
  • When mixture is light and fluffy, add eggs and continue beating until smooth.
  • Dissolve baking soda in buttermilk.
  • Stir into batter.
  • Add mashed bananas, cake flour, & vanilla.
  • Mix well.
  • Pour into greased 9x13 inch pan.
  • Bake at 350° for 30-45 minutes or until toothpick inserted in center comes out clean.

For the cream cheese frosting

  • Beat cream cheese, butter, milk, and vanilla in medium bowl on low speed until smooth.
  • Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable.
  • Spread over cooled cake.
  • Refrigerate the cake.

Notes

You can use unsalted butter if you desire. I've also made this recipe with all purpose flour and had it turn out.
