Peanut Butter Banana Muffins Recipe

What You Need to Make Peanut Butter Banana Muffins
You’ll probably have most of the ingredients for these tasty muffins on hand. Here’s what you need so you can double check:
- 1/3 cup shortening
- 2/3 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 (10 oz.) package peanut butter chips-I use Reese’s.
- 1 cup ripe, mashed bananas
- 2 eggs
How to Make Peanut Butter Banana Chip Muffins
The first step is to preheat your oven to 350 degrees. Second, you’ll measure out 1/3 cup of shortening.
Add 2/3 cup of sugar.
Next, beat the shortening and sugar together.
Then beat in 2 eggs.
After that, mix in 1 teaspoon of vanilla. Beat until smooth.
Next, mash 1 cup of ripe bananas and add to the mixture.
Measure 1 1/2 cups flour, and add to the mixture.
Blend in 1 teaspoon of baking soda just until moistened.
Gently stir in peanut butter chips. (Try not to eat the whole bag. Seriously, these things are sooooo good!)
Line your muffin cups with muffin liners. Then spray each muffin cup.
Fill each muffin cup about 2/3 of the way full with batter.
Finally, you’re going to bake these at 350 degrees for 15-20 minutes. This recipe makes 16-18 muffins.
Enjoy! If you want them to last a little longer, store them in an air tight container in the refrigerator. They’re super quick grab and go breakfasts or snacks.

- To this mixture, add mashed bananas, flour, and baking soda.
- Blend just until moistened.
- Stir in entire package of peanut butter chips.
- Grease each muffin cup.
- Fill each muffin cup â…” full.
- Bake at 350° for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Cover and refrigerate leftovers.
My son is absolutely going to love these peanut butter muffins! And the fact that they have chocolate chips means they will not last long in my house!!

Does peanut butter come in a sweetened and unsweetened variety? Because I’ve only tastes peanut butter once and it kind of tasted like eating dirt. I must be missing something given how popular it is
There are actually 3 different types of peanut butter-conventional peanut butter, natural peanut butter, and no-stir peanut butter spread. I always use conventional peanut butter because of the 3 types, it is the type that tastes sweeter to me.
We make banana muffins all the time but why I have never thought to add peanut butter to them as well? We love peanut butter, this is a genius idea, thank you so much!
