How to Make Delicious Peanut Butter Chip Banana Whoopie Pies

Just like almost every kid out there, my kids currently went through a phase where they were into eating ALL the bananas. Until they weren’t. That left tons of brown bananas on my counter! I knew I had to do something with them, but what? Suddenly I remembered my peanut butter banana chip muffins, and that got me thinking. How could I turn those muffins into a delicious new treat?
A Quick Easy Snack or Breakfast
I usually make these as muffins for breakfast or quick grab and go snacks. They’re filling, and I almost always have all of the ingredients on hand. The Reese’s peanut butter chips might be the only thing I have to buy. But usually I keep a bag or two on hand because you just never know what they might be good in.
What You’ll Need to Make The Batter
Here’s the list of ingredients you’ll need to make them:
- 1 cup ripe, mashed bananas
- 1/3 cup shortening
- 2/3 cup sugar
- 1 1/2 cups flour
- 1 teaspoon vanilla
- 2 eggs
- 1 teaspoon baking soda
- 1-10 oz. package peanut butter chips-I use Reese’s

How to Make the Whoopie Pies
I have found using a whoopie pie pan the easiest. The pan I use is made by Wilton and looks like this. However, I found a super cool silicone one here.
First, spray your whoopie pie pan.
Second, fill your pan with the batter.
Then bake at 350 degrees for 16-20 minutes or until done.
Remove from pan and cool.
While they’re cooling, make the filling.
Ingredients Needed to Make the Filling
You’ll need the following ingredients to make the filling:
- 1 cup creamy peanut butter
- 2-3 tablespoons of water
- 1 teaspoon of vanilla
- 3/4 cup shortening
- 3 cups powdered sugar
How to Make the Filling
First, put 3/4 cup shortening in a bowl.
Second, add 1 cup creamy peanut butter.
Third, add 1 teaspoon of vanilla.
Fourth, add 3 cups of powdered sugar.
Finally, add 2-3 tablespoons of water. Then mix. I found 3 tablespoons of water to give me the perfect filling consistency.
Spread filling on one half of cooled whoopie pie. You can spread filling as thin or as thick as you like.
Top with other half of whoopie pie.
Wrap each finished whoopie pie in plastic wrap. You can store them in the refrigerator for up to 1 week to keep them longer. Enjoy!
Peanut Butter Chip Banana Whoopie Pies
Ingredients
For the batter
- 1/3 cup shortening
- 2/3 cup sugar
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 cup ripe bananas
- 1 10 oz package peanut butter chips
- 2 eggs
For the Filling
- 3/4 cup shortening
- 1 cup creamy peanut butter
- 1 tsp vanilla
- 3 cups powdered sugar
- 2-3 tbsps water
Instructions
For the Batter
- Preheat oven to 350 degrees.
- Blend shortening and sugar together.
- Add eggs and vanilla.
- Beat until smooth.
- To this mixture, add flour, baking soda, and mashed bananas.
- Blend just until moistened.
- Stir in entire package of peanut butter chips.
- Grease each whoopie pie pan opening.
- Fill each whoopie pie pan opening with batter.
- Bake at 350 degrees for 16-18 minutes or until a toothpick inserted comes out clean.
- Remove from pan and cool on counter while you make the filling.
For the filling
- Put the shortening, peanut butter, vanilla, powdered sugar, and water in a bowl.
- Mix until combined and filling is to your desired consistency.
- Spread filling on cooled whoopie pies.
- Wrap each whoopie pie in plastic wrap.
- Refrigerate for up to 1 week. Enjoy!
